Practice.... but a good rule of thumb is to hold it until the sounds start overlapping each other in a way that you don't want (and I 'you' because music is about interpretation)) and then release for a second. If there's a note that you want held through the release, then hold the key down or use the middle pedal (depending on the configuration of your piano)

PLEASE teach this song next set! It's so fun and irresistable! I heard it on the radio the other day for the first time and simply loved it! Then I thought of you John and I was pretty sure I'd seen this song in your collection, but never looked at it. Well this is a brilliant version, and your singing is very good too.
