The point of jousting is not as much about unhorsing as you would like it to be. Read some more about cooking you sound like you are more interested in that field anyway.

haha well its not really that good for me, ill make a correction, i USED to joust without armour, i gave it up after 4 shoulder reconstructions, shattered cheek bone, 32 dislocated shoulders, and 14 broken shoulders, and more. once u beat the pain barrier its not that bad. you should try it, but dont go hard out the first few goes.

jousting is about defeating the other oponant - not just knocking them of their horse, but also just hitting them with the lance

stabbing the horse with the lance throws the rider off so i would go for the horse its a closer and quicker target, of course only in war

Absolutely right and recommended in some historical sources but only for war as you mention yourself.
Then it would certainly not be jousting anymore ;))) !

In a joust of peace, the object is to break your lance on a specific part of your opponent. The original impact must be with "coronel", the lance tip. Location awarding victory can vary from a tournament to another.
In any joust, of peace or war, you WANT your lance to break, because it stops pushing. Many unhorsings are self unhorsings due to a lance that won't break.
