I liked your wall covering ideas, but I don't see how they really help Erin out with the tacky wall paneling. I've lived with that nasty stuff and you don't want any of it showing. So what I did with my room is I hung a bunch of fabric like a Moroccan tent room all over the walls and celling, if she doesn't like the ethnic styles I would suggest Ikea's fabrics in bold trendy prints made intentionally for hanging you can find Ikea on the web, cool stuff.

Contact paper is most commonly used to cover paperback workbooks to help keep them in shape. It's like a giant sleeve of tape. (Great for gradeschool workbooks < 3)
Anyways, you can find contact paper at any office/school supply store. Colors and styles may vary from where you go, but that's where you're going to find it.

Another idea that I've tried around my sewing area is line the wall with some bulletinboard paper for a temporary wallpaper. Double-sided tape and the occasional pushpin should hold it up. You can paint, draw, write, whatever on it (as long as it doesn't bleed through), and when you're bored or moving, just take it down and start over again.
Bulletinboard paper can be found in most office supply stores and come in only few colors, though, generally some pastels or generic rainbow shades.
