They probably waited on the Three Thousand because KITT was so damn reliable. Come the time of the Four Thousand, the Three Thousand was probably sill being worked on, hence why it's more advanced than even the Four Thousand.
And I don't think the original KITT would show up anyway, as both his cars were Pontiac and the new show has a contract with Ford...
